Detoxed water from Miracle Leaves

 The medicated detoxed water from the miracle leaf(dupor bon, pategoja) - grown in the balcony. 

Common Name: Air Plant, Life Plant, Miracle Leaf, Cathedral Bells, Goethe Plant.

Scientific Name: Bryophyllum pinnatum / Kalanchoe pinnatum.

Family: Crassulaceae


Recipe:

A few miracle leaves are ground, then mixed with black salt, ginger, tulsi leaves to make it a nice paste. Then it is filtered using a stainer. With few drops of lemon and honey as per taste makes it our awaited detoxed juice.

Mishti Dahi | A modified version | Lockdown recipe

Suddenly, mishti dahi has become one of my favourites when it comes to deserts or any other time pass food! I have bought from local stores - a good number of mishti dahi bowels, but the appetite was still growing strong day by day. I realised that it would be good it that can be prepared at home without any preservatives. More importantly, the kid started considering it as a regular side dish. So, I started giving it a thought and tried to find suitable methods to prepare it. It was my first attempt, but it was diligently done and to all my excitement, it came out as a winner! Let me share the recipe with you so that you can share it with your near and dear ones. 

Ingredients required are milk half litre (full fat milk), sugar(4 table spoon for caramelising and 2 table spoon for sweetening), Kesar(strings half tsp), cardamom power(1/4th tsp), plain yogurt (3 tbsp).

Mishti Dahi
Milk is thickened by heating in low to medium flame for ten to fifteen minutes. As per taste, sugar is added. In another container, sugar is caramelised. Now both caramelised sugar and thickened milk are mixed with cardamom powder and kesar. After a good mix is done, the item is brought to temperature which can just be touched - warm. The plain yogurt is whisked and mixed with the warm milk. The whole mixture is now kept in an earthen pot or a clay pot or any steel pot covered with steel foil or air tight cover. Steam can be applied on the container for 10-15 minutes. Then it should be kept to settle for around eight hours. When it is set, it can be put in refrigerator for two to three hours. 

Please note that in winter, the curd may take upto 24 hours to get settle.

Khorisa | Bamboo shoot | Old Indian Kitchen


One of my most favorite aroma based lists of foods, bamboo shoot is really close to my heart. From the childhood, I remember mom cooking so called khorisa or baah gaaj quite often, it actually sits in the traditional thali of Assam. The flavor it produced is so different, so natural by its own. In fact, bamboo shoot is consumed in different parts of India - it is known by different local names. Apart from India, in many countries of Asia also, it is consumed.

Raw bamboo shoot contains natural toxins, which need to be destroyed by boiling and through the process of cooking. The toxin also gets destroyed in the process of canning.

The outer fibrous layer of the young bamboo shoots are stripped off first. The inner little bit of creamy white core is crushed or grated and then it is kept in a sterilized pot. After closing pot, it is left to ferment naturally for a week or so. Once fermented, the pulp is separated and excess water is squeezed out. Now, this fermented pulp is stored in a container for a year or even more, it is popularly known as poka khorisa. Many people dry it under the sun too. It is often used to make pickle by mixing salt, mustard oil and ghost chilies(found in Assam).

Country Chicken Curry - Yummy Dish with semi gravy - Old Indian Kitchen

How to make local chicken or country chicken as a delicious gravy - Old Indian Kitchen.

Storm has passed by! Fasting period  is over :-D, hurrah ! I was delighted to see my husband coming with a mouth watering native chicken, it's skin had been burned with turmeric in the butcher shop. So my first level of work is already over, now I am really happy to cook, lets enjoy 😍

Ingredients for my chicken recipe:

  • Curd 200 grams.
  • Country chicken 500 grams.
  • Onions 3.
  • Fresh Garlic cloves 8.
  • Ginger 1/2 inch.
  • Cumin powder 2 tbsp.
  • Coriander powder 1 tbsp.
  • Pepper powder 1/2 tbsp.
  • Green chili 2
  • Salt for taste.
  • Sugar 1/3 tbsp.
  • Potato 2

Recipe for my style chicken gravy:

  1. Wash and clean the country chicken and divide all in two bowls including 500 grams each. i am going to cook 500 grams for two people.

  2. Marinate the chicken using 4 tbsp of curd and 1 tbsp of turmeric powder.

  3. Keep it in a refrigerator for 45 minutes to 1 hour.
  4. Meanwhile, peel the onions, garlic and ginger.
  5. Grind all separately in a grind jar and keep all the pastes in different bowls.
  6. Now all the masalas are almost ready, peel 2 potatoes and cut them in center.
  7. If 45 minutes is over, take out the marinate chicken bowl from refrigerator.
  8. Heat 2 tbsp oil in a iron cooking pot, add a little sugar in the oil and also add the chickens.

  9. Allow them to fry for 7 to 8 minutes.

  10. Meanwhile take another deep cooking pot or karahi.
  11. Heat 2 tbsp of oil and first add the garlic paste, then add the ginger, fry them for 30 seconds in low heat.
  12. Add the onions paste and mix all the ingredients properly and fry them for 5 to 6 minutes in low heat.
  13. Add 1/2 tbsp of turmeric, 1 tbsp of cumin powder and 1 tbsp of coriander powder.
  14. Mix well.
  15. Now transfer the whole chicken semi fries to this cooking pot.

  16. Allow them to cook with onions and mixed masalas.

  17. Add 1 tbsp of cumin powder along with 1/2 tbsp of pepper powder.

  18. Add the potatoes and cover the karahi for 20 minutes, check after every 4 to 5 minutes.
  19. Add salt for taste.
  20. Wait till the chicken is cooked and becomes soft.

  21. Just add two cups of warm water.
  22. Stir them carefully.
  23. Allow them to cook with water for 15 minutes.
  24. Now your beautiful semi gravy dish will be ready.
Serve it with steam rice or butter naan/paratha.

*Try this recipe and try the country chicken, its really tastier than the hybrid one.
**If you wish you can make it in the same cooking pot. Pre frying chicken is optional.
***You can fry the chicken directly with the onions, ginger-garlic paste.

Sattu is a natural protein powder/energy pack powder from Old India. It is a very healthy appetizing food. In long travels also, people carry sattu balls, sattu paratha, sattu chutney to relieve their hunger in an easy healthy way. It gives lots of energies and make people lively.💗


Today, I will share whole procedure of making sattu powder and my favorite chutney.Hope you will enjoy.😊😊

Process to make sattu powder at home:

  1. Take 500 grams of whole bengal grams.
  2. Wash and clean.
  3. Dry it properly under sun.

  4. Heat one iron pan and add the grams.

  5. Roast them well, no other ingredients is required to roast.
  6. Roast it about to 20 minutes in low heat.

  7. Check once, if it is roasted properly then turn off the hit.

  8. Allow them to get cold in room temperature.
  9. Add all to a grinder jar.
  10. Grind all properly until become smooth.

  11. You can keep this powder in air tight container up to 6 months and can use .

Ingredients for Sattu Chutney:

  • Sattu powder 3 tbsp.
  • Onions 1
  • Squeezed Lemon 1 tbsp
  • Chili 1
  • Salt

Recipe:

  1. Take one plate and add 3 tbsp of fresh home made sattu powder.
  2. Add chopped onions.
  3. Add chilies.
  4. Salt for your taste.
  5. Squeeze 1 tbsp of lemon slice.

  6. Add a little water and mix them well.
  7. Sattu chutney is ready, its very tasty, you can try this with your lunch and dinner.
