How to make Rice Payash or Kheer - Old Indian Kitchen



Hello everyone, welcome back to your Old Indian Kitchen.

 Today is one of  the auspicious days of Indian culture, we are celebrating Maha Shivaratri 2017 in honor of god Shiva🝤. In Shivaratri, devotees worship Shiv lings with diya, agarbatti, bael leaves and milk and offering sweets as a prashad.


I am one of the devotee of lord Shiva and I plan to make one sweet dessert - Rice Payash -  to worship my Shiva. It is a very yummy sweet dessert and easy to make. You can make this special dish in any occasion or any day or  when you wish to have😇.

Ingredients :

  • A good fragrance rice (jeera rice/ gopal bhog rice/ Joha chauol) 60 grams.
    Kheer rice
  • Pure cow milk 1 litter.
  • Bay leaf 1
  • Cardamom 3 to 4.

  • Cashew 7
    Milk and other ingerdients
  • Raisins 10
    dry fruit
  • Milkmaid/ Condensed milk  150 ml.
  • Pure ghee 2 tbsp

Recipe:

  1. Light on the gas and put one container. In my case, I am using one 2 litter cooker. I use it only for auspicious event.
  2. Add 1 litter milk to the container and make them boil.
  3. Add 1 bay leaf and 3  split cardamom at the same time.

  4. Clean and wash the fragrant rice.

  5. Once milk starts boiling, just decrease the heat and stir them with a ladle.

  6. Add the rice and stir them well.
  7. Stir continuously to avoid burning.
  8. Check the rice, if it is cooked 70%, please add the cashews and raisins.
  9. Again stir them well and permanently put one spoon there to avoid overflowing.
  10.  If the dish is cooked 80 %, just add the condensed milk to the container.

  11. Allow them to cook 100 % .
  12. check one rice by pressing, if its cooked properly, then add 2 tbsp of ghee and 1 crunched cardamom.

  13. Turn off the heat.
  14. The process will take about 45 to 50 minutes.
  15. I take out a small quantity in a glass bowl to offer to my lord Shiva.

Note:
We are using some basic ingredients in almost all the recipes. Here, we will try to mention all the benefits of each ingredient.

Onion benefits:
1.Onion is a good source of vitamin C.
2.Onion improves the immunity system of human body.
3.Onion regulates the blood sugar.
4.Onion (raw onion)keep your heart healthy by reducing the production of bad cholestrol.
5.Onion is reducing the risk of gastric ulcers.

Garlic benefits:
1.Garlic is a natural blood purifier.
2.Garlic is good for reliefing cold and flu.
3.Garlic and mustard oil hot mixer is very good for massage.
4.It is very good for high blood pressure.
5.Garlic can prevent heart disease.
6.Garlic may help you live longer.

Ginger benefits:

Pach Phoron and benefits:
 Panch Phoron is a combination of five spices in a equal amount, named fenugreek seed, nigella seed or kalonji, cumin seed, black mustard seed and fennel seed.
Benifits:
1.You will get benifits of five seeds in a same time in one recipe.
2.It very easy to use pach phoron in preparing lenthils.
3.It will satisy your taste because all the seeds have different, nice flavour.
4.It is usefull in preparing pickles.

Fenugreek seed benefits:
1.It is good for high bp patient.
2.It is also benificial for diabetic patient.
3.It helps to reduce cholesterol.
4.It helps to relieve sore throat pain and cough.
5.It is very good for new mothers.

Black mustard seed benefits:
1. It is good for skin and hair.
2.It fights against infection.
3.Mustard seed slows ageing.
4.Also mustard seed can prevent many disease.

Nigella or kalonji seed benefits:
1.It is very helpful in different disease.
2.It is good in cold.
3.It is natural fertilizer booster.

Fennel seed benefits:
1. It helps in weight loss.
2. It is good for liver.
3. It is good for eyesight.
4. It helps purify blood.
5  It is a natural mouth freshner.

Garam masala (Mixer of cinnamon + cloves + cardamom) benefits:
