Carrot Payasam/ kheer - Sweet dessert -Old Indian Kitchen

How to make Carrot Kheer or Carrot Payasam in a easy way- Old Indian Kitchen.  

                                          Good morning all.Welcome to Old Indian kitchen cooking.  

                     In Indian culture,we don't feed new guest without a dessert.So ,desserts are the important part to complete our Indian food plates.

              Carrot Kheer or Carrot Payasam is one of the most loved sweet desserts from Old Indian Kitchen. It is a very healthy dessert rich in vitamin A,C,K etc ,we generally serve it after lunch or dinner. It is a quick and a very easy recipe, you can prepare it in a half an hour.So enjoy and wish you a very happy cooking.

Ingredients:

  • Fresh sweet carrot 2 in medium size.
  • Bay leaf 1
  • Cashew nuts broken pieces 8
  • Raisins 8
  • Refine oil 5 tbsp
  • Good quality dairy milk 1/2 liter.
  • Deshi pure ghee 2 tbsp.
  • Elaichi or Cardamom 3 
  • Sugar 1 tbsp

Recipe:

  1. Peel the carrots and grind them well.
  2. Heat oil in deep cooking pot and fry the cashew ,raisins for 30 second.
  3. Take out the fry items in a plate.
  4. Now add the bay leaf  to the oil and decrease the heat.
  5. Next add the carrots and mix it thoroughly.
  6. Add sugar and mix them them properly  with a spoon.
  7. Continuously stir the dish for 5 to 7 minutes.
  8. Now add  2 cups of warm milk to the dish.
  9. Add the cashew and raisins.
  10. Stir them repeatedly and check if the dish starts boiling and become thick ,then turn off the heat
  11. Take out in a bowl and add 2 tbsp of ghee.
  12. Garnish the dish with crunched cardamom and serve it after lunch, dinner or with evening tea.
