Mango Cake with chocolate layer
I live in Bangalore, India. The mango season is almost coming to an end here and you will hardly get good quality mango from now onwards. I kept a mango aside for some time thinking that I would try something new in my cake experiments :-).
Ingredients are refined wheat flour - One and half coffee cup, ripe mango cubes - almost a bowl, sugar - half cup, cocoa powder - 2 table spoon, mango custard powder - 1 table spoon, dark chocolate - 7/8 blocks, curd - half bowl, 2 eggs, vanilla essence - 2 tsp, baking powder - 1 tsp and baking soda - half tsp.
In a bowl, firstly the refined oil and the sugar are whisked and then eggs are added and whisked again. Then curd is added. Now when these ingredients are ready, the refined wheat flour is added. The grinded mango is added. Whisking continues and vanilla essence is added. Then mixed the baking powder and baking soda. The batter is almost ready.
In a cake tin, one tsp of oil is brushed uniformly over the inner surface. A little bit of flour is sprinkled over it - so that the cake can be removed easily once it is baked.
The batter is divided into 3 parts. One part is added to the cake container now. A thin layer is made by mixing cocoa powder and batter. This layer is added on top of the first layer. The third layer is made of the custard powder and the remaining batter. These constitutes the 3 layers of different colour and feel.
Now the cake tin is gently tapped to settle the mixture. It is then kept in a pre heated(180 degree) oven for 30 minutes.
After the cake is baked, the melted chocolate is laid on top and a little bit of sprinkles are also added. Let the cake settles for 30 minutes.
It is ready :-). Happy baking.
